Mesquite BBQ Grilled Corn with Compound Butter
Grilled corn finished with a Curley's Mesquite glaze and herb butter. This is the side dish that gets requested again every time. Simple, fast, and genuinely impressive.
How To Make It

Soak corn in husks in cold water for 30 minutes. Preheat grill to medium-high.

Grill corn in husks over medium heat, turning occasionally, for 15 minutes.

While corn grills, mix softened butter with garlic, fresh herbs, chili powder, and a pinch of salt.

Pull husks back carefully (they'll be hot — use a towel). Brush corn generously with Curley's Famous Mesquite BBQ Sauce.

Return corn directly over high heat, turning frequently, 4–5 minutes until char spots appear and sauce is caramelized.

Remove from heat. Immediately top with a spoonful of the herb compound butter. Finish with cotija or Parmesan cheese.
The compound butter melts into the Curley's Mesquite glaze and creates a rich sauce in the charred grooves of the corn. Serve immediately while the butter is still melting.
