Grill & Skillet
Smoky BBQ Turkey Burgers
Grill or Skillet Method
Turkey gets a bad reputation on the grill — dry, crumbly, and forgettable. This recipe fixes all three. A breadcrumb and egg binder keeps everything together, and Curley's Smoky mixed right into the meat adds flavor and moisture before the patty ever hits the heat.
How To Make It
- 1
In a large bowl, combine ground turkey, Curley's Famous Smoky BBQ Sauce, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently with your hands until just combined — don't overwork it.
- 2
Divide the mixture into 4 equal portions. Shape each into a patty about ¾ inch thick. Press a slight indent in the center of each to prevent puffing during cooking.
- 3
Refrigerate patties for at least 10 minutes. This firms them up and makes them easier to handle on the grill or skillet.
- 4
Heat a grill or cast iron skillet over medium-high heat. Lightly oil the grates or pan. Cook patties 6–7 minutes on the first side — do not press down.
- 5
Flip carefully. Cook another 5–6 minutes, or until the internal temperature reaches 165°F.
- 6
During the last 2 minutes, brush generously with additional Curley's Famous Smoky BBQ Sauce and let it caramelize into a glaze.
- 7
Toast buns lightly on the grill or in a pan. Assemble with your preferred toppings and an extra drizzle of Smoky sauce.
The breadcrumb and egg binder keeps these together and prevents them from crumbling. Turkey has less fat than beef so it needs the help — the Curley's Smoky sauce inside adds both flavor and moisture.
